Coconut Rice Recipe

Ingredients
  • 2 slices fresh ginger root
  • 1/2 tsp salt
  • 1/4 c sliced onion
  • 3/4 c water
  • 1 1/2 c coconut milk
  • 2 tsps curry powder
  • 2 c long grain rice, rinsed & drained

Directions
  • Step #1 In a medium saucepan, water, curry powder, onion, ginger, coconut milk, mix rice, & salt.
  • Step #2 Cover, & bring to a boil.
  • Step #3 Reduce heat, & let simmer for 20 to 30 mins, or until done.
  • Step #4 .
