Chicken Stew With Dumplings Recipe

Ingredients
  • 1/2 tsp dried basil
  • 5 c water
  • 3 tbsps butter or margarine
  • 1 medium onion, cut into eighths
  • 2 tsps baking powder
  • 3/4 c milk
  • 2 1/2 lbs chicken thighs or legs
  • 1 tsp salt
  • 2 celery ribs, sliced
  • 3 carrots, cut into 2-inch pieces
  • 1 1/2 c all-purpose flour
  • 1/4 tsp dried thyme
  • 1/4 c minced fresh parsley
  • 1 (10 oz) package frozen peas
  • 3/4 lb new potatoes, quartered
  • 1/2 tsp salt
  • DUMPLINGS:
  • 1/2 tsp pepper

Directions
  • Step #1 Place chicken & water in a 5-qt.
  • Step #2 Dutch oven.
  • Step #3 Cover & cook over med-heat/flame for 1 to 1-1/2 hrs or until chicken is tender.
  • Step #4 Skim fat.
  • Step #5 Remove chicken from broth; allow this to cool.
  • Step #6 Debone chicken & cut into chunks; return to broth.
  • Step #7 Add next nine ingredients.
  • Step #8 Cover & cook over med-heat/flame for 15-20 mins or until vegetables are tender.
  • Step #9 Meanwhile, mix flour, baking powder & salt in a bowl; cut in butter until mixture resembles coarse crumbs.
  • Step #10 Stir in milk & parsley.
  • Step #11 Drop dough by rounded tbspfuls into simmering stew.
  • Step #12 Cook, uncovered, for 10 mins.
  • Step #13 Cover & cook for 8-10 mins or until the dumplings are tender.
