Corn And Tomatillo Salsa Recipe

Ingredients
  • 2 tbsps fresh lime juice
  • 1 (14.5 oz) package tortilla chips
  • 1/2 sliced green bell pepper
  • 2 tbsps water
  • 2 seeded & finely sliced jalapeno peppers
  • 1/2 tsp ground coriander
  • 1/2 lb husked, cored & sliced tomatillos
  • 4 ears fresh corn kernels
  • 2 thinly sliced green onions
  • 2 tbsps sliced fresh cilantro

Directions
  • Step #1 In a large skillet, mix the corn kernels & jalapeno peppers.
  • Step #2 Cook & stir for 10 mins, until the jalapenos are soft.
  • Step #3 In a saucepan over high heat, lime juice, green onions, green bell peppers, mix the corn & jalapeno mixture with the tomatillos, water & coriander.
  • Step #4 Cover & bring to a boil.
  • Step #5 Reduce heat to low & let simmer 5 mins, stirring once.
  • Step #6 Remove from heat.
  • Step #7 Cool for 10 mins.
  • Step #8 Stir in the cilantro.
  • Step #9 Allow the mixture to cool in the refrigerator.
  • Step #10 Serve with tortilla chips.
