Chicken Jubilee Recipe

Ingredients
  • 1 (12 fluid oz) can or bottle chile sauce
  • 1/2 c brown sugar
  • 1/4 c melted butter
  • 1 c brandy
  • 1/2 c raisins
  • 1/2 c water
  • 1 tbsp Worcestershire sauce
  • 8 skinless, boneless chicken breast halves
  • 1 onion, thinly sliced
  • salt & pepper to taste
  • 1 (16.5 oz) can pitted Bing cherries, drained, juice reserved

Directions
  • Step #1 Preheat oven to Broil.
  • Step #2 Lightly brush chicken breasts with melted butter & broil for 2 to 3 mins each side, or until just lightly browned.
  • Step #3 Preheat oven to 325F degrees F (165 degrees C).
  • Step #4 Place browned chicken in a 9x13 inch baking dish.
  • Step #5 In large bowl mix the reserved cherry liquid, sugar, onion, water, chile sauce, Worcestershire sauce, raisins & salt & pepper to taste.
  • Step #6 Mix all together & pour mixture over chicken.
  • Step #7 Cover dish & bake this at 325F degrees F (165 degrees C) for 1 hr.
  • Step #8 Remove cover, add cherries & brandy to chicken & bake uncovered for another 15 mins.
