Cheesy Zucchini Bake Recipe

Ingredients
  • 1 (6 oz) can tomato paste
  • 2 tbsps minced garlic
  • 2 tbsps olive oil
  • 1 (10.75 oz) can tomato puree
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 3 tbsps sugar
  • 3 c shredded mozzarella cheese
  • 1 large onion, sliced
  • salt & pepper to taste
  • 4 1/2 c sliced zucchini
  • 2 (2.25 oz) cans sliced ripe olives, drained
  • 1 1/2 c grated Parmesan cheese
  • 6 eggs, lightly beaten

Directions
  • Step #1 In a large skillet, saute zucchini in oil until tender.
  • Step #2 Sprinkle top with salt & pepper; stir.
  • Step #3 Transfer to an ungreased 13-in.
  • Step #4 x 9-in.
  • Step #5 x 2-in.
  • Step #6 baking dish.
  • Step #7 In the same skillet, saute onion until crisp-tender.
  • Step #8 Add garlic; saute 3 mins longer.
  • Step #9 stir in the tomato puree, tomato paste, sugar, Italian seasoning & basil.
  • Step #10 Bring to a boil.
  • Step #11 Reduce heat; simmer, uncovered, for 10-15 mins or until slightly thickened.
  • Step #12 Stir in olives.
  • Step #13 Pour over zucchini.
  • Step #14 Sprinkle top with mozzarella.
  • Step #15 Combine the eggs & Parmesan cheese; pour over zucchini.
  • Step #16 Bake, uncovered, at 375 degrees F for 25-30 mins or until a knife inserted near the center comes out clean.
  • Step #17 Let the dish stand for 15 mins before serving.
