Chinky's Bibingka Recipe

Ingredients
  • 3 c coconut milk
  • 2 c coconut milk
  • 1 1/2 c white sugar
  • 2 egg yolks, beaten
  • 1 tsp salt
  • 2 tbsps all-purpose flour
  • 1/2 c shredded mozzarella cheese
  • 3 tbsps melted butter
  • 1 (14 oz) can sweetened condensed milk
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 tsp lemon zest
  • 1/4 c shredded mozzarella cheese
  • 4 c grated fresh cassava

Directions
  • Step #1 NOTE: Cassava, tapioca or yucca, also known as Manioc, can be found in Filipino or Latin American food stores.
  • Step #2 Usually sold frozen & grated.
  • Step #3 Mix together the cassava with the coconut milk, melted butter & eggs.
  • Step #4 Stir in the white sugar, vanilla, salt, cheese & lemon rind.
  • Step #5 Pour batter into a 9x5 inch loaf pan & bake this at 350 degrees F (175 C) for 30-35 mins or until done.
  • Step #6 To Make Topping: Put 2 c coconut milk, & some grated cheese in a saucepan & boil, flour, condensed milk, stirring constantly.
  • Step #7 When thick, add the slightly beaten egg yolks.
  • Step #8 Cook for two mins.
  • Step #9 Spread on top of the cooked cassava & bake this at 400F degrees F (200 degrees C) for ten mins or until golden brown.
