Double Chocolate Biscottii Recipe

Ingredients
  • 1/4 c olive oil
  • 1 (5 oz) milk chocolate candy bar, sliced
  • 1 1/8 c unsweetened cocoa powder
  • 2 tsps baking powder
  • 3/4 c egg substitute
  • 2 1/2 c all-purpose flour
  • 1 c white sugar
  • 1/4 c margarine
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Line cookie sheets with parchment paper.
  • Step #3 In a large bowl, beat the sugar, olive oil & margarine until smooth.
  • Step #4 Stir in the egg substitute & vanilla.
  • Step #5 Combine the flour, cocoa & baking powder, slowly stir in theto the wet ingredients.
  • Step #6 Mix in the sliced candy bar.
  • Step #7 Chill dough for 10 mins.
  • Step #8 Divide the dough into two equal pieces.
  • Step #9 Roll each piece into a 9 inch long log.
  • Step #10 Place the logs onto the prepared cookie sheet 4 inches apart & flatten to 1 1/2 inch thickness.
  • Step #11 If there is not enough room, put each one onto a separate sheet.
  • Step #12 Bake for 20 to 25 mins in the preheated oven until somewhat firm.
  • Step #13 Cool on the baking sheets until cool enough to handle.
  • Step #14 Remove baked loaves to a cutting board & cut each one crosswise into 1/2 inch slices with a sharp knife.
  • Step #15 Place the slices cut side down back onto the baking sheets, & toast on each side for an extra 8 to 10 mins.
  • Step #16 Cool on wire racks & store this in an airtight container.
