Coconut Graham Cracker Squares Recipe

Ingredients
  • 1 tsp vanilla extract
  • 1 egg, beaten
  • 1 c butter or margarine
  • 1/4 c butter or margarine, softened
  • 1 c sliced walnuts
  • 1 c sugar
  • 1/2 c milk
  • 2 c confectioners' sugar
  • 24 whole graham crackers
  • FROSTING:
  • 1/8 tsp salt
  • 2 tbsps milk
  • 1 c graham cracker crumbs
  • 1 c flaked coconut

Directions
  • Step #1 In a heavy saucepan, melt butter.
  • Step #2 Stir in sugar, milk & eggs.
  • Step #3 Bring to a boil; cook & stir for 10 mins.
  • Step #4 Remove from the heat.
  • Step #5 Stir in coconut, nuts & cracker crumbs.
  • Step #6 Line a greased 15-in.
  • Step #7 x 10-in.
  • Step #8 x 1-in.
  • Step #9 baking pan with 12 whole crackers.
  • Step #10 Spread with the coconut mixture.
  • Step #11 Top with remaining crackers; press down carefully.
  • Step #12 Cover with plastic wrap & put in the fridge for 30 mins.
  • Step #13 Meanwhile, in a mixing bowl, mix frosting ingredients; beat until smooth.
  • Step #14 Break each cracker into four portions; spread with frosting.
