Chocolate Applesauce Cake Recipe

Ingredients
  • 1/8 tsp salt
  • 1/4 c unsweetened cocoa powder
  • 1 tsp ground nutmeg
  • 1/4 c dark rum
  • 2 c all-purpose flour
  • 1 1/2 c applesauce
  • 2 tbsps dark rum
  • 1 tsp ground cinnamon
  • 1/2 c milk
  • 2 tsps baking soda
  • 1 c raisins
  • 1 1/4 c white sugar
  • 1 c sliced pecans
  • 1/2 c butter

Directions
  • Step #1 In a bowl, cream the butter or margarine with the sugar.
  • Step #2 Beat in the milk, applesauce, & 2 tbsps of rum.
  • Step #3 In another bowl, cocoa, baking soda, spices, stir this together the flour, & salt.
  • Step #4 Beat into the creamed mixture & then stir in the the raisins & pecans.
  • Step #5 Turn the batter into a greased & floured 9x13 inch baking pan.
  • Step #6 Bake the cake in a preheated 350 degrees F (175 degrees C) oven for 45 mins, or until it tests done with a toothpick.
  • Step #7 Immediately after removing the cake from the oven, sprinkle it with the remaining 1/4 c rum.
  • Step #8 Let cool on a rack.
  • Step #9 This cake improves if allowed to sit for a day or so before eating.
  • Step #10 Serves 20.
