1/2 c sliced drained pimientos (or just a small jar)
Directions
Step #1 DAY ONE, UNO.
Step #2 Mix chili powder, garlic, lime juice, 3 T.
Step #3 oil, cumin (or cilantro) in large bowl to form a paste.
Step #4 Add beef cubes & mix until coated.
Step #5 Refrigerate in a zip bag for 24 hrs, mixing it around when you think of it.
Step #6 NOTE: Original recipe called for "stewing beef", but I use sirloin or other steak.
Step #7 DAY TWO, DOS.
Step #8 In Dutch oven, mix marinated beef with canned tomatoes, broth & beer.
Step #9 Preheat oven to 350.
Step #10 Bring meat mixture to a boil over high heat on range top.
Step #11 Place in oven, covered, & bake 45 mins.
Step #12 Uncover & continue baking until beef is tender, about another 45 mins.
Step #13 Cool, shred beef & return it to cooking liquid.
Step #14 Cover up & put in the fridge overnight.
Step #15 DAY THREE, TRES.
Step #16 Heat 3 T.
Step #17 olive oil in heavy large skillet over med-heat/flame & saute onion & jalapenos.
Step #18 Strain beef cooking liquid into skillet & bring to a boil.
Step #19 Reduce heat & let simmer uncovered until sauce is reduced to 1/2 c, stirring every once in awhile, about 50 mins.
Step #20 Mix in beef & add frozen corn, olives (be sure to count them) & pimento.
Step #21 Heat through, hot sauce, sour cream, guacamole, add salt & pepper and/or hot sauce to taste & serve this with any desired taco garnishes (shredded cheese, lettuce, sliced green onions, etc.
Step #22 ) Freeze in meal size portions if desired.
Step #23 Makes enough for 20 tacos.
