Step #1 In a skillet, cook the sausages & place on paper towels to absorb the excess fat.
Step #2 Cut the sausages in two, put aside.
Step #3 In a small bowl mix the apple sauce & the cinnamon.
Step #4 Preheat the oven at 350°F.
Step #5 Prepare the pancake mix following the box instructions.
Step #6 Heat your griddle or pan till it's hot cook ,ladle just enough batter to make not too thick crêpes.
Step #7 Once the crêpes are cooked, place two sausage halves & 2 or more tbsps of cinnamon apple sauce.
Step #8 Fold the crêpes by rolling them like cigars.
Step #9 Lay them in a oven baking dish.
Step #10 Cook them in oven for 15 mins or until hot.
Step #11 Serve with warm maple syrup.
