Step #1 Combine sugar, constarch, & salt in saucepan, add milk.
Step #2 Cook over med-heat/flame, stirring constantly, until thick & bubbly (8 mins), cook one more min.
Step #3 Temper eggs by briskly whisking small spoons of hot milk mixture into eggs (best done in a small heavy bowl).
Step #4 Whisk egg mixture into milk mixture.
Step #5 Add rice, raisins, butter & vanilla.
Step #6 Let stand 10 mins.
Step #7 Stir carefully, spoon into dessert dishes & sprinkle with nutmeg.
