Bubba Gump's Creamy Shrimp Curry Recipe

Ingredients
  • 1/2 tsp salt .
  • sliced scallions .
  • 1/3 c flour .
  • 2 lbs medium shrimp, unpeeled .
  • 2 tbsps melted butter .
  • fresh cilantro .
  • 1 tbsp peanut oil .
  • 1 1/2 tsps sugar .
  • 6 c water .
  • roasted peanuts .
  • Toppings .
  • raisins .
  • 14 oz chicken broth (or vegetable broth) .
  • 1 1/2 c milk (or 1 c milk & 1/2 c cwhipping cream) .
  • 1/2 tbsp freshly grated gingerroot .
  • toasted coconut .
  • 1 tsp fresh lemon juice .
  • cooked bacon, crumbled .
  • 1 1/2-2 tbsps curry powder, to taste (depending on the spiciness of your curry powder!) .
  • 1/2 c minced onions

Directions
  • Step #1 In large pot of boiling water, cook the shrimp for about 3 to 5 mins or until shrimp turns pink.
  • Step #2 Drain, rinse with cold water, devein & set aside.
  • Step #3 Cook onion in butter & peanut oil in large skillet over med-heat/flame until softened.
  • Step #4 Lower heat & add flour & curry powder.
  • Step #5 Stir with whisk until smooth & no lumps remain.
  • Step #6 Cook for 1 min stirring constantly until mixture thickens.
  • Step #7 Stir in sugar, fresh ginger, salt, & lemon juice.
  • Step #8 Add shrimp & cook this until heated through.
  • Step #9 Serve shrimp with hot cooked white rice garnished with any or all of the suggested toppings.
