Lime & Mustard Chicken Noodle Soup Recipe

Ingredients
  • chili flakes .
  • salt & pepper .
  • 2-3 tbsps frozen peas (adjust to suit) .
  • 1 lime, juice of .
  • 1/2 tbsp ground cinnamon .
  • 150 ml water (approx.) .
  • 1 small chicken breast (cooked) .
  • 1-2 tbsp English mustard (Yellow) .
  • 1/2 tbsp ground ginger .
  • rice noodles (medium)

Directions
  • Step #1 1.
  • Step #2 Soak noodles in hot water to soften.
  • Step #3 Drain, then set aside with a touch of oil to prevent sticking.
  • Step #4 2.
  • Step #5 Bring the water to a simmer & add the peas.
  • Step #6 They will cook while you get on with the rest.
  • Step #7 3.
  • Step #8 Cut cooked chicken breast into bite-sized pieces.
  • Step #9 Different sizes make it more interesting.
  • Step #10 4.
  • Step #11 In a small bowl, ginger & chilli flakes, cinnamon, mix the chicken pieces with the Lime juice, then add these to the Water & Peas.

  • Step #13 Add the noodles, followed by the mustard, salt & pepper.
  • Step #14 6.
  • Step #15 Bring to a gentle boil, stirring occasionaly.
  • Step #16 Allow the noodles time to absorb the flavours of the mustard & lime before serving.
