Ingredients
5 lbs dried beans or dried peas .
1/2 tsp salt, per pint jars
Directions
Step #1 Select Mature, dry seeds.
Step #2 Sort out & discard discolored seeds.
Step #3 Place Beans or peas In a large-ish pot & cover with water.
Step #4 Soak 12 to 18 hrs in a cool place.
Step #5 Drain water.
Step #6 Again cover beans with fresh water & boil 30 mins.
Step #7 Add 1/2 tsp salt per pint jars or 1 tsp for quart jars if desired.
Step #8 Fill pint or quart jars with the soaked beans & cooking water, leaving a 1 inch head space.
Step #9 Adjust lids & process.
Step #10 Recommended process time for Beans or Peas in a dial-gauged pressure canner.
Step #11 Pints: 75 Minutes at 10 lbs.
Step #12 Quarts 90 Minutes at 10 lbs.
Step #13 5 lbs of beans is needed per canner load of 7 quarts.
Step #14 3 1/4 lbs of beans are needed for 9 pints.
