Ingredients
1/4 c cold water .
3/4 c shortening or lard .
1 (2.5-3 lb) chickens .
salt & pepper, to taste .
1 tsp salt .
1 tsp salt .
1 celery rib .
1 large onion .
Pastry .
1/4 c water .
Chicken .
1/4 c all-purpose flour .
2 c all-purpose flour
Directions
Step #1 Place chicken, onion, celery & salt In a large-ish pot.
Step #2 Add enough water to completely cover the chicken.
Step #3 Bring to a boil; reduce heat & let simmer until chicken is tender & cooked through, about 1 hr.
Step #4 Remove chicken from broth & cool enough to handle.
Step #5 Pick chicken off the bones & discard bones.
Step #6 Grease a 9 x 13-inch baking dish.
Step #7 Remove celery & onion from broth.
Step #8 Measure broth & return 3 c to the pot.
Step #9 In a small bowl, mix 1/4 c flour with 1/4 c water to make a smooth paste.
Step #10 Stir into hot broth.
Step #11 Cook 5 to 10 mins or until broth is thickened.
Step #12 Spice up with salt & pepper.
Step #13 Pour over chicken.
Step #14 For Pastry:.
Step #15 In a large bowl, mix 2 c flour & 1 tsp salt.
Step #16 Cut in shortening with a pastry mixer or two knives until mixture forms coarse crumbs.
Step #17 Sprinkle top with cold water & mix until dough hold together & will form a ball.
Step #18 Roll out on a floured board or pastry cloth to about 1/4 inch thickness.
Step #19 Cut into strips & place over the chicken.
Step #20 Bake at 375 degrees F until the pastry is golden brown.
