Eggplant (aubergine) And Ground Beef Layers Recipe

Ingredients
  • 1 tsp cumin .
  • 1 c lemon juice .
  • 1/2 tsp ground ginger .
  • 1/2 c textured vegetable protein .
  • 2 c canned tomato sauce .
  • 2 tbsps balsamic vinegar .
  • 2 large eggplants (white ones are nice but any will do) .
  • 1 lb lean ground beef .
  • 4 tomatoes, sliced .
  • 1/4 c breadcrumbs .
  • 1 tsp hot pepper flakes (more if you like it hot, less if you don't) .
  • 1 tbsp olive oil .
  • 1 egg .
  • salt & pepper

Directions
  • Step #1 Slice eggplant quite thick & marinate in oil, balsamic, lemon juice, salt & pepper.
  • Step #2 Let sit for a couple of hrs.
  • Step #3 BBQ or broil slices until brown.
  • Step #4 Spray a rectangular glass ovenproof dish with Pam & arrange the slices on the bottom of the dish in a layer or 2.
  • Step #5 Soak the TVP in boiling water for 5 mins & mix it with the ground beef.
  • Step #6 Add the egg, breadcrumbs & spices plus 1 tsps salt & 1/2 tsp pepper.
  • Step #7 Arrange the raw beef mixture over the eggplant & pat it flat into a layer.
  • Step #8 Pour the tomato sauce over the beef & arrange a layer of sliced tomatoes on top.
  • Step #9 Cover up with foil wrap.
  • Step #10 Bake at 375 for 40 mins until the beef is cooked.
  • Step #11 Renmove the foil wrap & bake another 15 mins so the tomatoes get nice & well done.
