Breakfast Butternut Squash Recipe

Ingredients
  • 2 garlic cloves, minced .
  • sunflower seeds .
  • raisins .
  • 1 tbsp lemon juice .
  • 1/2 c sliced celery .
  • 2 tbsps vegetable oil .
  • 1 tsp grated gingerroot .
  • 1 tsp finely sliced fresh onions .
  • 1 lb butternut squash, peeled, seeded, & sliced into 1/4 inch slices .
  • 2 tsps honey .
  • 1 c broccoli florets

Directions
  • Step #1 Heat oil In a large-ish skillet over medium-high heat; stir/saute the butternut squash, garlic, & ginger for about 3 mins.
  • Step #2 Add in the broccoli, celery, & onion; saute for 3-4 more mins or until vegetables are crisp-tender.
  • Step #3 Mix together the lemon juice & honey; add to vegetables; toss to coat.
  • Step #4 Top with a sprinkling of sunflower seeds or raisins.
