Roast Pork With Madeira Sauce Recipe

Ingredients
  • salt & pepper .
  • 187 1/2 ml madeira wine .
  • 1 tbsp vinegar .
  • 2 bay leaves .
  • 1 c white wine .
  • 1 lemon, zest of .
  • 2 lbs pork loin .
  • 1 oz flour

Directions
  • Step #1 Put the pork into a roasting pan with 1 c water, white wine, lemon zest, vinegar, bayleaves, salt & pepper.
  • Step #2 Bake in a moderate oven.
  • Step #3 Baste from time to time until the pork is tender.
  • Step #4 Take from the pan, thicken the sauce with a flour & water paste, add the madeira & strain.
  • Step #5 Slice the pork & serve this with the sauce poured over it.
  • Step #6 Tom make a crisp crust, remove the pork from the pan when it is tender & leave to get cold.
  • Step #7 Brush the top this with beaten egg yolk, coat with breadcrumbs, moisten with gravy & return to the oven.
  • Step #8 Continue roasting & basting until you have a crust half an inch thick.
