Kim's Mom's Cucumber Salad Recipe

Ingredients
  • 10 radishes, thinly sliced .
  • 1/2 tsp black pepper .
  • 1/2 tsp kosher salt .
  • 6 tbsps white vinegar .
  • 1/3 c grated carrots .
  • 1 large cucumber, peeled, seeded, & cut into 1/4-inch-thick slices .
  • 1/2 c water .
  • 3 tsps Splenda granular, artificial sweetener

Directions
  • Step #1 In a liquid measuring c, measure the water.
  • Step #2 Add the next 4 ingredients to the measuring c (vinegar through pepper) & stir this together to make the dressing.
  • Step #3 In a medium, nonreactive (plastic or ceramic) mixing bowl, mix the vegetables.
  • Step #4 Pour dressing over all & stir this to mix.
  • Step #5 Cover up the salad with plastic wrap & put in the fridge for at lest 1 hr.
  • Step #6 Prior to serving, drain excess dressing off the salad.
