Melted Mexican Cheese Dip Recipe

Ingredients
  • taco sauce .
  • 1 tbsp finely sliced cilantro (or to taste) .
  • 1 (4 oz) can green chilies (about 1/2 c) .
  • 1 c non-alcoholic beer .
  • 1-2 jalapeno pepper, seeded & finely sliced .
  • tortilla chips .
  • salt & pepper .
  • 3 tbsps flour .
  • 4 c Mexican mix cheese (I use Sargento brand for this)

Directions
  • Step #1 In a large bowl, mix the cheese & flour.
  • Step #2 In a heavy-bottomed saucepan bring the beer to a boil; reduce heat & add in the cheese/flour 1/2 c at a time, stirring constantly until the cheese is melted.
  • Step #3 Repeat with remaining cheese mixture, stir until thickened DO NOT BOIL.
  • Step #4 Stir in chiles, cilantro, jalapeno pepper & salt & pepper to taste.
  • Step #5 Immediately pour the mixture into a glass 8-inch baking dish.
  • Step #6 Drizzle with taco sauce.
  • Step #7 Serve as soon as possible, or keep warm in oven.
