Creamy Sweet Corn Sauteed With Peppers Recipe

Ingredients
  • 3 ears corn, husks & silk removed .
  • 1 tbsp extra-virgin olive oil .
  • 1 tbsp fresh lime juice .
  • 1/4 c finely sliced onions .
  • 1 medium red bell pepper, stemmed, seeded & finely sliced .
  • 2/3 c sour cream .
  • 1/2 tsp hot sauce .
  • 1/4 tsp kosher salt .
  • 1/4 tsp ground cumin

Directions
  • Step #1 If you've never removed corn from the cob before, you're really missing out on some amazing taste.
  • Step #2 To remove the corn from the cob, stand the cob on one end & slice the kernels downward.
  • Step #3 Measure about 2 c.
  • Step #4 In a large skillet, heat the oil over med-heat/flame.
  • Step #5 Add the onions & bell peppers.
  • Step #6 Saute 5 mins.
  • Step #7 Stir in the corn & the salt.
  • Step #8 Continue cooking for 4 mins.
  • Step #9 Test the corn for tenderness.
  • Step #10 Stir together the sour cream, hot sauce, cumin & lime juice.
  • Step #11 Remove the corn mixture from the heat & slowly stir in the the seasoned sour cream.
  • Step #12 Put the pan back over medium-low heat & stir a couple of mins to heat through.
