Apple Topped Cheesecake Bars Recipe

Ingredients
  • 1 egg .
  • 1/2 c granulated sugar .
  • 1/2 c butter, softened .
  • 1/3 c confectioners' sugar .
  • 3 apples, peeled, cored, sliced .
  • 30 gingersnap cookies .
  • 1/2 c sour cream .
  • 1/4 c apple juice .
  • 2 (8 oz) packages cream cheese, softened .
  • 1 tbsp cornstarch .
  • 3 tbsps granulated sugar

Directions
  • Step #1 Heat oven to 350°F.
  • Step #2 In food processor/blender, pulse cookies & 3 tbsp of the sugar until cookies are crushed.
  • Step #3 Add 5 tbsp of the butter; pulse until moistened.
  • Step #4 Line a 13x9x2 baking pan with foil wrap.
  • Step #5 Press cookie mixture over the bottom of prepared pan.
  • Step #6 Beat cream cheese, sour cream, egg & confectioner's sugar in large bowl until smooth.
  • Step #7 Spread over crust in pan.
  • Step #8 Bake at 350 for 25 mins.
  • Step #9 Meanwhile, melt remaining 3 tbsp butter in large skillet over med-heat/flame.
  • Step #10 Add apple pieces & saute 5 mins.
  • Step #11 In a small bowl, mix apple juice & cornstarch.
  • Step #12 Add remaining 1/2 c granulated sugar & cornstarch mixture to skillet.
  • Step #13 Cook until bubbly & thickened.
  • Step #14 When bar is done, pour apple mixture on top; spread smooth.
  • Step #15 Return to oven; bake 5 more mins.
  • Step #16 Remove from oven, let cool.
  • Step #17 Refrigerate until chilled; cut in squares.
