Beth's Carrot Cake Recipe

Ingredients
  • 1 tbsp vanilla .
  • 1 tsp nutmeg .
  • 8 large eggs .
  • 4 c flour .
  • 4 c sugar .
  • 1 tsp salt .
  • 1 tbsp baking powder .
  • 3 c sliced walnuts (optional) .
  • 2 tbsps cinnamon .
  • 3 c vegetable oil .
  • 2 tsps baking soda .
  • 2 (8 oz) cans crushed pineapple .
  • 5 c carrots (fine grated)

Directions
  • Step #1 Mix vegetable oil, eggs & vanilla in a bowl; set aside.
  • Step #2 Place sugar, baking powder, cinnamon, flour, nutmeg, soda & salt in large bowl.
  • Step #3 Mix wet ingredients into dry till well mixed.
  • Step #4 Fold in carrots, pinapple & nuts.
  • Step #5 Bake times are approximate (insert knife in center, cake is done when comes out clean).
  • Step #6 Spring Form pan: 60-70 mins.
  • Step #7 Tube/Bundt pan: 50-60 mins.
  • Step #8 Loaf pan: 40-50 mins.
  • Step #9 8" cake pans: 30-35 mins.
  • Step #10 Again, this recipe makes several of the above.
  • Step #11 I usually make a two layer cake then maybe a loaf or mini loafs.
  • Step #12 I imagine you could make some nice muffins or sheet cake as well but I am not sure of the cook times.
  • Step #13 Top with your favorite cream cheese frosting or eat plain.
