Chicken Salad Pockets Recipe

Ingredients
  • 2 c cubed cooked chicken breast
  • 3 tbsps canola oil
  • 6 pita breads, cut in half
  • 2 c shredded red leaf lettuce
  • 2 garlic cloves, minced
  • 1 tsp sugar
  • 3 green onions, thinly sliced
  • 1 medium tomato, seeded & sliced
  • 1 medium cucumber, seeded & sliced
  • 1/4 c lemon juice
  • 1/2 tsp dried basil

Directions
  • Step #1 In a bowl, mix the chicken, cucumber, tomato & onions.
  • Step #2 In a small bowl, oil, mix lemon juice, garlic, sugar & basil; mix well.
  • Step #3 Pour over chicken mixture & toss to coat.
  • Step #4 Cover & put in the fridge for 2 hrs.
  • Step #5 Just before serving, add lettuce & toss to coat.
  • Step #6 Spoon about 1/2 c into each pita half.
  • Step #7 .
