Sweet And Sour Shrimp Fried Rice Recipe

Ingredients
  • 3 tbsps grated unsweetened coconut .
  • 1/2 red bell pepper .
  • 1 tsp sea salt .
  • 1 c water .
  • 1/4 large fresh pineapple .
  • 2 small carrots .
  • 1/2 c brown basmati rice .
  • 2 tbsps canola oil .
  • 1 green onion .
  • fresh ginger (walnut size piece) .
  • soy sauce .
  • 4 oz bean sprouts .
  • 6 oz shrimp, peeled & de-veined

Directions
  • Step #1 In a saucepan, stir the rice over medium high heat until lightly toasted.
  • Step #2 Add the water & salt & bring to a boil.
  • Step #3 Cover up tightly & let simmer over low heat/flame for 20 mins or until liquid is absorbed.
  • Step #4 Meanwhile, trim & peel the carrots, wash, then cut into slices.
  • Step #5 Halve the bell pepper, remove the seeds, rinse & cut into squares.
  • Step #6 Trim the green onion & cut into thin rings.
  • Step #7 Peel the ginger & cut into very thin strips.
  • Step #8 Peel & halve the pineapple & cut away core & any brown spots.
  • Step #9 Chop flesh of pineapple.
  • Step #10 In a wok or large skillet, heat the oil over medium - high heat.
  • Step #11 Add the carrots, pepper, & green onion & stir-fry briefly.
  • Step #12 Then slowly add the coconut, ginger & bean sprouts sirring continuously.
  • Step #13 Add the cooked rice, pineapple & shrimp.
  • Step #14 Stir - fry until the shrimp just turns opaque.
  • Step #15 Spice up with soy sauce & serve as soon as possible.
