Mexican Chicken Casserole Recipe

Ingredients
  • 1 (10 oz) can chicken broth .
  • 8 oz Velveeta cheese, shredded .
  • 3 c cooked rice .
  • 1 (15 oz) bag nacho cheese flavored tortilla chips, crushed .
  • 1 (10 oz) can cream of chicken soup .
  • salt & pepper .
  • 1 (10 oz) can sliced tomatoes & green chilies .
  • 1 (10 oz) can cream of mushroom soup .
  • 2 lbs boneless skinless chicken breasts, cooked & sliced into bite-sized pieces

Directions
  • Step #1 Prepare chicken & rice.
  • Step #2 Preheat oven to 350°F Mix together soups, tomatoes, & broth.
  • Step #3 In a large casserole dish, layer half of chicken, soup mixture, & cheese.
  • Step #4 Repeat.
  • Step #5 Top with crushed chips.
  • Step #6 Bake for 45 min or unitl bubbling & serve over rice.
  • Step #7 NOTE: the chips get pretty dark, if you are afraid they will burn cover the casserole.
