Salmon With Maple And Mustard Seed Sauce Recipe

Ingredients
  • 2 tbsps maple syrup .
  • fresh ground black pepper, to taste .
  • 1/4 c sliced scallions .
  • 4 garlic cloves, finely sliced .
  • 28 oz center-cut salmon fillets .
  • salt, to taste .
  • 1 tbsp vegetable oil .
  • 3 tbsps water .
  • 2 tbsps Dijon mustard .
  • 2 tsps mustard seeds .
  • 1/4 tsp dill

Directions
  • Step #1 Heat the oil in a non-stick pan until it is very hot.
  • Step #2 Pat the fish dry, remove the skin & season both sides with salt & pepper, to taste.
  • Step #3 Put the fish, skin (now skinless) side down & cook for about 4 mins.
  • Step #4 Turn over & sear on the other side, for another 3-4 mins.
  • Step #5 While the salmon is cooking, mix the water, maple syrup, mustard seeds, garlic, mustard, dill & scallions together.
  • Step #6 Remove the salmon & place on a covered plate & cover loosely with foil wrap to keep it warm.
  • Step #7 Remove the pan from the heat for about one min.
  • Step #8 Return to the heat & pour in the mustard/maple mixture.
  • Step #9 Whisk the ingredients into the pan & allow the liquid to reduce slightly.
  • Step #10 Pour the sauce over the fish & serve.
