Chicken And Vegetable Tortilla Roll-ups Recipe

Ingredients
  • 1/2 c grated parmesan cheese .
  • 1/4 c 2% low-fat milk .
  • 1 tbsp dry sherry .
  • 1 lb boneless skinless chicken breasts, cooked .
  • 6 (10 inch) fat free tortillas .
  • 1 (10 3/4 oz) can 98% fat free condensed cream of celery soup, undiluted .
  • 1 c sliced broccoli .
  • 1 c sliced carrots

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Spray 13x9 inch baking dish with nonstick cooking spray; set aside.
  • Step #3 Cut chicken into 1 inch pieces; set aside.
  • Step #4 Combine broccoli & carrots in 1 quart microwavable dish.
  • Step #5 Cover up & microwave at HIGH 2 to 3 mins or until vegetables are crisp-tender; set aside.
  • Step #6 Combine soup, milk & sherry in small saucepan over med-heat/flame; cook & stir 5 mins.
  • Step #7 Stir in Parmesan cheese, chicken, broccoli & carrots.
  • Step #8 Cook 2 mins or until cheese is melted.
  • Step #9 Remove from heat.
  • Step #10 Spoon 1/4 c chicken mixture into each tortilla.
  • Step #11 Roll up & place, seam side down, in prepared baking dish.
  • Step #12 Cover up dish & bake 20 mins or until heated through.
