Healthy Mexican Polenta Pie Recipe

Ingredients
  • 3 oz green chilies .
  • 1 (15 oz) can drained black beans .
  • 2 c water .
  • 3/4 c shredded fat-free cheddar cheese .
  • taco seasoning .
  • 1/4 tsp salt .
  • 3/4 c cornmeal (i use stone ground which is coarse)

Directions
  • Step #1 boil water & salt.
  • Step #2 add cornmeal.
  • Step #3 reduce heat to medium low & whisk until thickened about 5 mins.
  • Step #4 whisk in about half a packet of taco seasoning & the greeen chilis.
  • Step #5 spread polenta mixture into pie pan coated with cooking spray.
  • Step #6 bake uncovered at 375 degrees for 15 mins.
  • Step #7 mix beans & cheese & spread on top of polenta.
  • Step #8 bake uncovered for 20 mins.
  • Step #9 let cool 5 mins prior to slicing.
  • Step #10 top this with taco garnishes such as fat free sour cream, onion, sliced tomato, jalepeno slices,and black olives.
