Beef Chimichangas Recipe

Ingredients
  • 1 garlic clove, minced .
  • 12 flour tortillas (8 in.) .
  • 6 oz chorizo sausage .
  • 1 (8 oz) can tomato sauce .
  • 1/2 tsp ground cumin .
  • 1 c monterey jack cheese .
  • 1 lb ground beef .
  • vegetable oil .
  • 1/2 c finely sliced white onions

Directions
  • Step #1 Remove casing from chorizo.
  • Step #2 Heat large skillet over high heat until hot.
  • Step #3 Reduce heat to medium.
  • Step #4 Brown chorizo 6 to 8 min.
  • Step #5 Add beef.
  • Step #6 brown 6 to 8 min Add onion, garlic, & cumin.
  • Step #7 Cook 4 min or until onion is soft.
  • Step #8 Discard fat.
  • Step #9 Stir in tomato sauce.
  • Step #10 Reduce heat to low, cover & let simmer 15 min.
  • Step #11 Uncover, increase heat to med.
  • Step #12 Cook until liquid has evaporated.
  • Step #13 Warm tortillas.
  • Step #14 Place 1/4 c meat mixture on bottom half of 1 tortilla.
  • Step #15 Sprinkle top with 1 tbs.
  • Step #16 cheese.
  • Step #17 Roll up folding the sides inches Repeat with remaining tortillas.
  • Step #18 Heat 1 inches oil in skillet over medium high heat.
  • Step #19 Fry 2 or 3 chimichangas at a time for 2 or 3 min until golden brown on all sides.
