2 medium tomatoes, peeled & sliced to small cubes .

1 whole chicken, cut in half

Step #1 .
Step #2 Put the onions in a medium size pot, drizzle 2 tbsps of olive oil & cook it on medium high heat until the onions are yellowish & starting to brown then put the garlic, salt, pepper & the spice mix, tomato paste, cook for a few seconds then put in the tomatoes, cook it until it becomes a thick red sauce & the tomatoes are almost melted.
Step #3 .
Step #4 Put in the chicken halves sauté it with the sauce for a few mins, then poor in some hot water just a little bit over the chicken & bring it to a boil, then lower the heat to medium low & let it cook for 40-50 mins or until the chicken is cooked.
Step #5 .
Step #6 While the chicken is cooking wash the rice & soak it in cold water for 30 mins.
Step #7 .
Step #8 Take the chicken out & put it in a roasting pan, put in the oven & broil it until it’s golden.
Step #9 .
Step #10 Drain the rice from water & put it into the chicken broth.
Step #11 Make sure there isn’t a lot of water in the pot.
Step #12 .
Step #13 Cook it on medium high heat, let it boil until it is almost dry but not too dry make sure there is a little bit of broth left in the bottom of the pot.
Step #14 .
Step #15 Lower the heat to very low & cover well & cook for 10 mins.
Step #16 .
Step #17 Now all you have to do is uncover put the rice in a big serving plate top this with the chicken serve this with a yogurt salad or a green salad & enjoy a great Saudi meal.
