Warm Spinach And Feta Dip Recipe

Ingredients
  • 1 small onion (sliced) .
  • 120 g baby spinach .
  • 2-3 tbsps creme fraiche .
  • 1 tbsp olive oil .
  • 1 garlic clove (crushed) .
  • salt & pepper .
  • 100 g feta

Directions
  • Step #1 Saute the onion & garlic in oil until soft.
  • Step #2 Add the spinach & toss over gentle heat until wilted.
  • Step #3 Transfer the mixture to a food processor/blender & pulse until finely sliced.
  • Step #4 Add feta & pulse to mix.
  • Step #5 Add in enough creme fraiche to make a soft dip & season to taste.
  • Step #6 Serve with crostini etc.
  • Step #7 Note: To make crostini - pan fry both sides of angle sliced slices of french bread in a little olive oil over a moderate heat until light golden brown, or bake lightly brushed with olive oil, slices of french bread.
