Christmas Chocolate Town Cake Recipe

Ingredients
  • 1 tsp baking soda
  • 1 3/4 c white sugar
  • 1 tsp salt
  • 1/2 c boiling water
  • 2 eggs
  • 2/3 c shortening
  • 1 tsp vanilla extract
  • 1/2 c unsweetened cocoa powder
  • 2 1/2 c all-purpose flour
  • 1 1/3 c buttermilk

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour 2 - 9 inch pans.
  • Step #3 Sift together the flour, baking soda & salt.
  • Step #4 Set aside.
  • Step #5 Combine cocoa & boiling water in small bowl to form a smooth paste.
  • Step #6 Cool slightly.
  • Step #7 In a large bowl, cream together the shortening, sugar & vanilla until light & fluffy.
  • Step #8 Beat in the eggs one at a time.
  • Step #9 Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated.
  • Step #10 Blend in cocoa paste.
  • Step #11 Divide batter into 2 prepared 9 inch pans.
  • Step #12 Bake in the preheated oven for 35 to 40 mins, or until a toothpick inserted into the center of the cake comes out clean.
  • Step #13 Cool 10 mins in pans then turn out onto wire rack & cool completely.
