Moroccan-spiced Pork Chops And Fruity Couscous Recipe

Ingredients
  • 1 tbsp cilantro, fresh, sliced .
  • 8 fresh apricot halves .
  • 2 tsps ground coriander .
  • 1/2 tsp ground cinnamon .
  • 1/4 tsp turmeric .
  • 2 tsps ground cumin .
  • 1 1/4 c couscous .
  • 1/4 tsp cinnamon .
  • 1 tbsp harissa .
  • 2 1/2 c fat-free chicken broth .
  • 1 lb lean pork loin, sliced into four pieces (4 oz each) or 4 (4 oz) boneless pork chops .
  • 2 tsps olive oil

Directions
  • Step #1 Combine harissa, cumin, coriander & 1/2 tsp cinnamon in a resealable plastic bag.
  • Step #2 (Use a non-metal container if you prefer.
  • Step #3 ) Add chops to bag, seal & shake until well-coated.
  • Step #4 Marinate the meat for 30 mins in the fridge.
  • Step #5 Heat oil In a large-ish skillet over medium-high heat.
  • Step #6 Cook chops until cooked through, about eight mins per side.
  • Step #7 Bring broth to boil in a medium saucepan.
  • Step #8 Add 1/4 tsp of cinnamon, tumeric & couscous.
  • Step #9 Turn heat down to lowest possible setting, cover & let simmer for 5-7 mins.
  • Step #10 Fluff couscous & mix in the apricots & cilantro.
  • Step #11 Serve chops on top of the couscous.
  • Step #12 Cooking time includes the time to marinade the meat.
