Coconut Peach Dessert Recipe

Ingredients
  • 4 c sliced fresh or frozen peaches, thawed
  • 2 c heavy whipping cream, whipped
  • 2 tbsps all-purpose flour
  • 1/3 c sugar
  • 1 1/3 c flaked coconut
  • 1/2 c honey or sugar
  • 2 egg whites, lightly beaten
  • 1/2 tsp almond extract
  • TOPPING:
  • 1/8 tsp salt
  • 1/2 c sliced almonds

Directions
  • Step #1 In a small bowl, almonds, mix the coconut, sugar, flour & salt.
  • Step #2 Stir in egg whites & extract.
  • Step #3 Line a baking sheet with foil; grease foil well.
  • Step #4 Spread coconut mixture into a 9-in.
  • Step #5 circle on foil.
  • Step #6 Bake at 325F degrees F for 20-25 mins or until lightly browned.
  • Step #7 Cool on a wire rack.
  • Step #8 Refrigerate overnight.
  • Step #9 Place the crust on a serving plate; spread with whipped cream.
  • Step #10 Combine peaches & sugar; spoon over cream.
  • Step #11 Cut into wedges.
  • Step #12 Serve as soon as possible.
