The Best Beef Rouladen Recipe

Ingredients
  • 1/2 c fresh rye breadcrumbs .
  • 1/2 c sour cream (optional) .
  • 1 medium onion, sliced .
  • 1/2 lb ground veal .
  • 1/4 tsp marjoram .
  • 1 c beef stock .
  • 7-8 slices bacon, cut in half .
  • flour (for dredging) .
  • 1/4 tsp salt .
  • 1/4 tsp pepper .
  • 4 tbsps butter, divided .
  • 2 tbsps capers .
  • 2 1/2 lbs round steaks, thinly sliced .
  • 1/2 c dry red wine .
  • 1/4 c sliced fresh parsley .
  • 2-3 tbsps Dijon mustard .
  • 2 dill pickles, cut lengthwise into 8 strips .
  • 1/2 c tomato puree

Directions
  • Step #1 Pound beef with a meat lber to about 1/4 inch thick & trim meat into rectangles, about 3 by 5 inches.
  • Step #2 You should have 12 to 15 pieces.
  • Step #3 Heat 2 T.
  • Step #4 of the butter in a skillet & sauté onion until tender.
  • Step #5 Add veal & cook this until no longer pink.
  • Step #6 In a bowl mix veal-onion mixture with breadcrumbs, capers, parsley, marjoram, salt & pepper.
  • Step #7 Mix well.
  • Step #8 Spread each beef slice with a little mustard.
  • Step #9 Place a heaping tbsp of filling & 1 piece of pickle in the center & roll.
  • Step #10 Wrap a piece of bacon around the roll & tie with string.
  • Step #11 Dredge in flour.
  • Step #12 Any leftover filling can be added to the sauce.
  • Step #13 Heat the remaining 2 T.
  • Step #14 butter In a large-ish heavy skillet & brown the rouladen.
  • Step #15 Combine beef stock, wine, tomato pureé & leftover filling & add to the pan.
  • Step #16 Cook, covered, for about 1 1/2 hrs or until meat is tender.
  • Step #17 Remove rouladen to a warm platter & discard string.
  • Step #18 Skim fat from gravy & , stirring, mix in sour cream & let simmer, if desired, for 5 mins.
  • Step #19 Pour gravy over rouladen & serve this with spaetzle or riced potatoes.
