Shrimp With Tomato-horseradish Salsa Recipe

Ingredients
  • 1/4 tsp fresh ground black pepper .
  • 1 tbsp prepared horseradish .
  • 2 1/4 tsps kosher salt .
  • 1 pint cherry tomatoes, halved .
  • 3 tbsps olive oil .
  • 2 small head bibb lettuce .
  • 1 bay leaf .
  • 20 large shrimp, peeled & deveined (about 1 lb) .
  • 6 tbsps lemon juice (2 lemons)

Directions
  • Step #1 Fill a large pot with 8 c cold water; add half the lemon juice, the bay leaf, & 2 tsps of the salt.
  • Step #2 Bring to a boil.
  • Step #3 Add the shrimp & cook this until bright pink & opaque throughout, 1 to 3 mins.
  • Step #4 Transfer the shrimp to a bowl of ice water to cool.
  • Step #5 Drain & pat dry; set aside.
  • Step #6 In a bowl, the horseradish, whisk together the remaining lemon juice, & the oil; season this with the remaining salt & the pepper.
  • Step #7 Add the tomatoes & toss.
  • Step #8 Separate the lettuce leaves.
  • Step #9 Divide the shrimp & lettuce among 4 plates & spoon the Tomato-Horseradish Salsa on top.
