Norwegian Honey Cake Recipe

Ingredients
  • 1 tsp baking soda .
  • 1/2 tsp ground cloves .
  • 3 eggs .
  • 2 tbsps honey .
  • 4 c sifted flour .
  • 1/2 tsp ground cinnamon .
  • 1 1/2 c sour cream .
  • 1 c raisins .
  • 2 1/3 c sugar .
  • powdered sugar .
  • 3 tbsps grated orange rind

Directions
  • Step #1 Sprinkle top 1 tbs flour over raisins in a bowl.
  • Step #2 Toss to coat.
  • Step #3 Sift remaining flour, baking soda, cloves & cinnamon.
  • Step #4 Beat eggs & sugar in a bowl until fluffy.
  • Step #5 Beat in sour cream & honey.
  • Step #6 Add flour mixture & minx until mixed.
  • Step #7 Stir in raisins & orange rind.
  • Step #8 Pour into greased an floured 10inch angel food cake pan.
  • Step #9 Bake at 325F for 75 mins until cake pulls away from sides & spring back when touched lightly.
  • Step #10 Cool in pan on rack for 5 mins.
  • Step #11 Run knife around inner & outer edged of cake.
  • Step #12 Turn onto wire rack to cool completely.
  • Step #13 Store covered at about room temp overnight or for at least 8 hrs before cutting.
  • Step #14 Sprinkle top top this with powdered sugar & serve.
  • Step #15 For a decorative touch place a large doily over top of cake then sprinkle the powdered sugar over that & then remove for a lacy effect.
