Fruit And Nut Breakfast Bars Recipe

Ingredients
  • 1/2 tsp cloves .
  • 1/2 c golden raisins .
  • 2 tbsps honey .
  • 1/2 c mixed sliced dried fruit (apples, apricots, raisins, dates, cherries) .
  • 3 c 1% low-fat milk .
  • 1/2 c craisins .
  • 1 tsp cinnamon .
  • 1/2 c millet .
  • 1 tsp vanilla .
  • 1 1/4 c whole wheat couscous .
  • 2 tbsps white sugar, for sprinkling .
  • 1 lemon, zest of .
  • 2 eggs .
  • 1/2 tsp ginger .
  • 1/2 c sliced roasted hazelnuts .
  • 1/2 c light brown sugar

Directions
  • Step #1 Scald the milk, then stir in the the honey, vanilla & lemon zest.
  • Step #2 Add the couscous & stir once, then cover & let this stand until the milk is absorbed, about 15 mins.
  • Step #3 Meanwhile, nuts, millet, mix fruit, spices & sugar.
  • Step #4 Once couscous is done, fluff with a fork.
  • Step #5 Allow couscous to cool until warm, then stir this together with fruit mixture.
  • Step #6 Beat two eggs together, then stir in theto couscous mixture until moist & sticky.
  • Step #7 Add extra milk if necessary.
  • Step #8 Pat mixutre into greased 13x9" pan, smoothing out surface with the back of a spoon.
  • Step #9 Sprinkle top with white sugar to make a nice crisp crust.
  • Step #10 Put pan into a preheated 350 F oven & bake for about 40 mins of until a toothpick inserted in the middle comes out clean.
  • Step #11 Allow pan to cool completely, then cut into 16 skinny bars.
  • Step #12 Store bars in refrigerator up to one week.
