Savory Chicken Pie W/ham, Spinach And Swiss Recipe

Ingredients
  • 1 1/2 c cubed cooked chicken, 1/2-inch pieces .
  • 1/8 tsp pepper .
  • 3 tbsps butter .
  • 1 1/2 c cooked ham, 1/2-inch pieces .
  • 1 tsp dry mustard .
  • 1 (4 oz) can sliced mushrooms, drained .
  • 3 tbsps flour .
  • 1 (10 oz) package frozen sliced spinach, thawed & squeezed dry .
  • 1/4 c finely sliced onions .
  • 1 pastry for a double-crust 9-inch pie .
  • 1 1/2 c shredded swiss cheese .
  • 2 c milk

Directions
  • Step #1 Line 9" pie plate with pastry.
  • Step #2 Set aside.
  • Step #3 In 2 quart saucepan, melt butter & onion, saute til tender.
  • Step #4 Blend in flour, mustard & pepper.
  • Step #5 Cook stirring constantly over med-heat/flame, 1 min.
  • Step #6 Gradually stir in the milk.
  • Step #7 Cook, stirring constantly til mixture boils & thickens.
  • Step #8 Cook 1 min more.
  • Step #9 Remove from heat.
  • Step #10 Add in rest of ingredients, stirring, til cheese melts.
  • Step #11 Pour into pastry-lined pie plate.
  • Step #12 Cover up with top crust, seal edges, flute.
  • Step #13 Cut slits to vent.
  • Step #14 Bake in 400º oven for 35 mins, or til crust is golden brown.
  • Step #15 Let stand at least 20-30 mins before serving.
  • Step #16 6-8 servings.
