Roasted Tomato Free Form Pie Recipe

Ingredients
  • 1 tbsp anchovy fillet .
  • 1/3 c chilled water .
  • 125 g butter, sliced & chilled .
  • salt & pepper .
  • 90 g extra butter .
  • 1 lemon rind, shredded .
  • 8 roma tomatoes .
  • 1/4 c balsamic vinegar .
  • 2 c flour .
  • 2 Spanish onions .
  • 1/4 c olive oil

Directions
  • Step #1 Preheat oven to 180 Degrees Celsius.
  • Step #2 Cut each tomato into 4 wedges.
  • Step #3 Cut onions into wedges.
  • Step #4 Place tomatoes & onions onto baking tray lined with baking paper in a single layer.
  • Step #5 Splash with oil & vinegar & season.
  • Step #6 Cook for 25 mins.
  • Step #7 Sift flour into large bowl.
  • Step #8 Rub in butter using fingertips until mixture looks like breadcrumbs.
  • Step #9 Make a well in the centre, pour water into the flour & using hands stir water into flour to form a firm dough.
  • Step #10 Place dough onto lightly floured surface & knead.
  • Step #11 Wrap in plastic wrap & put in fridge for 10 mins.
  • Step #12 Place extra butter in a small bowl add lemon rind & anchovy fillet & beat to mix.
  • Step #13 Line oven tray with baking paper.
  • Step #14 Roll pastry out into large circle.
  • Step #15 Place on prepared tray.
  • Step #16 Fill centre with cooled vegetable mixture.
  • Step #17 Bring edges of pastry up to form sides & almost cover mixture.
  • Step #18 Bake 30 mins.
  • Step #19 Serve with lemon/anchovy butter on top - melting through.
