Amish Rhubarb Dumplings Recipe

Ingredients
  • 1 1/2 c sugar .
  • SAUCE .
  • 1/4 tsp salt .
  • 1/2 tsp cinnamon .
  • 1/3 c margarine .
  • DOUGH .
  • 1 tsp vanilla extract .
  • 3/4 c milk .
  • 2 c flour .
  • 1/2 c sugar .
  • 1 1/2 c water .
  • 2 tbsps sugar .
  • red food coloring (optional) .
  • 1/2 tsp cinnamon .
  • FILLING .
  • 2 c finely sliced fresh rhubarb .
  • 2 tbsps butter, softened .
  • 2 tsps baking powder .
  • 1/4 tsp salt .
  • 2 1/2 tbsps cold butter .
  • 1 tbsp flour

Directions
  • Step #1 in a saucepan, mix sugar, flour, cinnamon & salt.
  • Step #2 stir in the water; add butter.
  • Step #3 bring to a boil, cook & stir for 1 min.
  • Step #4 remove this from heat.
  • Step #5 add vanilla & if desired.
  • Step #6 food coloring to tint sauce a deep pink.
  • Step #7 set aside.
  • Step #8 to prepare DOUGH:.
  • Step #9 mix sugar, flour, baking powder & salt in a medium bowl -- cut in butter until mixture resembles coarse crumbs.
  • Step #10 add milk & mix quickly.
  • Step #11 do not overmix.
  • Step #12 gather dough into a ball & rol out of lightly floured surface to fit a 13x9" baking pan.
  • Step #13 spread with softened butter, arrange rhubarb on top.
  • Step #14 mix sugar & cinnamon, sprinkle it over rhubarb.
  • Step #15 roll up from long side & place on a cutting board; seam side down.
  • Step #16 cut roll this into 12 slices.
  • Step #17 arrange slices, cut side up in a greased 13x9" baking pan -- pour the sauce over top.
  • Step #18 bake this at 350* for 35-40 mins.
