Cranberry Almond Biscotti Recipe

Ingredients
  • 1 c sweetened-dried cranberries
  • 3/4 c sliced almonds
  • 1 tbsp vanilla extract
  • 2 1/4 c all-purpose flour
  • 1 c white sugar
  • 2 eggs
  • 1 tsp baking powder
  • 2 egg whites
  • 1/2 tsp baking soda

Directions
  • Step #1 Preheat oven to 325F degrees F (170 degrees C).
  • Step #2 Combine dry ingredients in a medium sized mixing bowl.
  • Step #3 Whisk together eggs, egg whites, & vanilla or almond extract in a separate mixing bowl.
  • Step #4 Add egg mixture to dry ingredients, mixing just until moist, using an electric mixer on medium speed.
  • Step #5 Add dried cranberries & almonds; mix thoroughly.
  • Step #6 On floured surface, divide batter in half & pat each half into a log approximately 14 inches long & 1 1/2 inches thick.
  • Step #7 Place on a cookie sheet & bake 30 mins or until firm.
  • Step #8 Cool on a wire rack.
  • Step #9 Reduce oven temperature to 300F degrees F (150 degrees C).
  • Step #10 Cut biscotti into 1/2 inch slices.
  • Step #11 Place cut biscottis on a cookie sheet & bake for an extra 20 mins.
  • Step #12 Let cool & store this in a loosely covered container.
