Brown Sugar And Bourbon Ribs Recipe

Ingredients
  • 1 cinnamon stick, broken in half .
  • 6 slices thin rounds peeled fresh ginger .
  • 1 large onion, sliced .
  • 3 tbsps apple cider .
  • 1 tbsp kosher salt .
  • 1/2 c apple butter .
  • 1 1/4 c apple cider .
  • racks of baby-back pork ribs or beef ribs .
  • Basting sauce .
  • Ribs .
  • 2 tbsps Dijon mustard .
  • 1/2 c packed golden brown sugar .
  • 1 tsp ground ginger .
  • 1 1/2 tsps dry mustard .
  • 1/2 tsp cayenne pepper .
  • 1/4 c apple cider vinegar .
  • 1 tbsp packed golden brown sugar .
  • 1/4 c bourbon .
  • 1/2 tsp ground cinnamon .
  • 1 1/2 tsps dried thyme

Directions
  • Step #1 For basting sauce: Whisk all ingredients in medium bowl to mix.
  • Step #2 For ribs:.
  • Step #3 Mix first 7 ingredients in small bowl.
  • Step #4 Using small sharp knife, loosen membrane from underside of each rib rack & pull off (or score membrane).
  • Step #5 Rub 1 tbsp seasoning mix into each side of each rib rack.
  • Step #6 Place ribs in large roasting pan.
  • Step #7 Cover up & chill at least 6 hrs & up to 1 day.
  • Step #8 Preheat oven to 325°F Lift ribs from pan.
  • Step #9 Scatter onion, cinnamon stick, & ginger in pan.
  • Step #10 Pour in cider.
  • Step #11 Return ribs, meat side down, to pan; cover pan with foil wrap.
  • Step #12 Roast ribs until meat is tender & begins to pull away from bones, about 2 hrs.
  • Step #13 Uncover; cool at least 30 mins & up to 2 hrs.
  • Step #14 Prepare barbecue (medium-high heat).
  • Step #15 Grill ribs until heated through & slightly charred, about 5 mins per side.
  • Step #16 Brush generously on all sides with basting sauce.
  • Step #17 Grill until sauce becomes sticky glaze, about 3 mins longer per side.
  • Step #18 Transfer rib racks to cutting board.
  • Step #19 Cut racks between bones into individual ribs.
  • Step #20 Arrange on platter & serve, passing remaining sauce separately.
