Rosemary Potato Galette Recipe

Ingredients
  • salt, to taste .
  • 1 1/2 tsps fresh rosemary leaves, sliced .
  • fresh ground black pepper, to taste .
  • 8 tbsps butter (1 stick) .
  • 4 idaho potatoes (8 oz each) .
  • 1 1/2 tsps fresh Italian parsley, sliced .
  • 3/4 tsp dried thyme (or 2 tsp. fresh)

Directions
  • Step #1 Peel the potatoes & slice them really thin, dropping the slices into a bowl of cold water as you go along.
  • Step #2 When they are all sliced, drain & pat dry.
  • Step #3 Melt 2 tbls.
  • Step #4 of the butter in a 10" nonstick skillet.
  • Step #5 Swirl the butter to coat the surface; then remove the skillet from the heat.
  • Step #6 Arrange 1/3 of the potato slices in a spiral, starting in the center & overlapping, so that the bottom of the skillet is covered.
  • Step #7 Cut 2 tbls.
  • Step #8 of the butter into small pieces & sprinkle them over the potatoes.
  • Step #9 Then sprinkle the potatoes with 1/2 tsps of the rosemary,1/2 tsp of the parsley, 1/4 tsps of the thyme, & salt & pepper.
  • Step #10 Repeat, & seasonings, butter, making 2 more layers of potates, pressing each layer down with a spatula.
  • Step #11 Place the skillet over medium low heat, & cook this until the bottom is crisp & golen brown, 45 mins.
  • Step #12 Then invert the galette onto a flat plate & slip it back into the skillet.
  • Step #13 Continue cooking until the other side is golden, 10 to 15 mins.
  • Step #14 Invert the galette agaiin onto a serving platter.
  • Step #15 Cut it into wedges & serve as soon as possible.
