Minted Honeydew Soup Recipe

Ingredients
  • Optional garnishes .
  • 1/4 c fresh mint leaves .
  • fresh mint sprigs .
  • 2 lbs ripe honeydew melon, peeled, seeded, & cut into chunks (about 1/2 large melon) .
  • 1 tbsp honey .
  • 3 tbsps freshly-squeezed lime juice (more if needed) .
  • thin lime slices .
  • salt

Directions
  • Step #1 Process the ingredients in batches in a mixer or food processor/blender until smooth.
  • Step #2 Cover up & chill at least 1 hr.
  • Step #3 Taste, if necessary, adding extra lime juice, & salt.
  • Step #4 Serve in individual chilled bowls, garnished with lime slices & mint sprigs, if desired.
