Chicken And Rice Soup Recipe

Ingredients
  • 1 1/2 c sliced, boiled chicken
  • 1/2 c butter, melted
  • 2 cubes chicken bouillon
  • 2 c milk
  • 3/4 c sliced celery
  • 1 c uncooked white rice
  • ground black pepper to taste
  • 4 tbsps all-purpose flour
  • 1 c milk
  • 2 1/2 c water
  • 3/4 c finely sliced onion

Directions
  • Step #1 Cook celery, bouillon, rice, onion, & water about 20 mins or until most of the water is absorbed by the rice.
  • Step #2 Remove from the heat.
  • Step #3 Make a cream base: Combine butter & flour in a small skillet, making a paste.
  • Step #4 Add 2 c milk & stir this to make a smooth sauce.
  • Step #5 Add cream base to the rice mixture.
  • Step #6 Add chicken & 1 c milk.
  • Step #7 If the soup seems thick, add more milk.
  • Step #8 Add pepper to taste & serve hot.
