Bananas Ghana Recipe

Ingredients
  • 3 tbsps shredded coconut or sliced peanuts .
  • 1/4 c sugar .
  • 3 tbsps apricot brandy .
  • 1 c orange juice .
  • 8 medium bananas, cut in half lengthwise & then crosswise .
  • 1 tsp cinnamon .
  • 1/2 c sour cream (optional) or low-fat sour cream (optional) .
  • 1 tbsp sugar (optional) .
  • Optional garnish

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Combine 1/4 c of sugar with cinnamon in a shallow bowl.
  • Step #3 Roll banana pieces in cinnamon sugar & place this in a 9 inch ovenproof dish.
  • Step #4 Mix orange juice & brandy together & pour this into dish with the bananas.
  • Step #5 Bake 20 mins, periodically basting the bananas with the juice.
  • Step #6 Remove bananas from oven & sprinkle either coconut or peanuts on top.
  • Step #7 If you like, mix together the sour cream & tablepoon of sugar.
  • Step #8 Serve on side as an optional garnish.
