Chicken Panang Recipe

Ingredients
  • 1 tbsp red curry paste .
  • 1/2 (12 oz) can coconut milk .
  • 1 lb chicken breasts, cut into strips .
  • 3/4 c chicken stock .
  • 4 fresh lime leaves .
  • 1 1/2 tsps sugar

Directions
  • Step #1 Put coconut milk, curry paste, chicken stock & lime leaves in a pan & let simmer for 10 mins until thickens slightly.
  • Step #2 Add the sugar & chicken & cook for 10 more mins until chicken is cooked, adding more stock if necessary.
  • Step #3 Serve with jasmine rice.
